Uosou Co., Ltd. is a long-established sushi restaurant founded in 1887 in Kofu City, Yamanashi Prefecture. For more than 120 years, we have carried on the local sushi culture and tradition from one generation to the next.
We remain committed to preserving the tradition of “Koshu Sushi,” characterized by generous portions of sushi toppings and rice, complemented by a mildly sweet sauce, while continuing to create a restaurant that is cherished by the local community.
Building on our long-standing history and the skills of our sushi chefs, we will continue to preserve the unique taste and culture of Koshu Sushi and pass them on to future generations.

Traditional Koshu Sushi
"Koshu Sushi" originated in Kofu after being introduced from Edo and has since developed into a unique local food culture.
At Uosou, we preserve the traditional characteristics of Koshu Sushi, including generous portions of sushi toppings and rice, complemented by a mildly sweet sauce. We continue to serve the distinctive taste that has been passed down through generations.
